Mild Frustration

I'm okay with eating the same thing day in and day out.  Other people are not.  This can make dinners in my house a little difficult at times.  Often my husband says there's "nothing" to eat in the house.  I don't blame him for not wanting "boring chicken" AGAIN.  I do try to have some variety in what I prepare for him, but I'm working with limited time.  For example, tonight I didn't get home from work until after 9pm and we didn't sit down for dinner until 10pm (which isn't too out of the ordinary).  I know it can get tiring to rotate through turkey tacos, chicken, and spaghetti with shrimp; however, when I'm cooking for one person I don't really want to make something more involved or time-intensive.  (I basically am cooking dinner for one each night because I typically have my food prepared for several days at a time and there isn't much "cooking" involved when I throw marinated chicken under the broiler and rice in the rice cooker.)  This then gets balanced with wanting to have healthier dinners for my husband, rather than throwing a pizza or frozen dinner in the oven.  So we both get frustrated around dinner time.  

I'm trying to get more motivated to fix different dinners for my husband - I don't want him to sprout feathers from all the poultry I'm serving him!  Any suggestions out there for dinners that are quick, easy, healthy, and yummy?  (I don't ask for much, do I?)

    • 3 egg whites
    • 30g dry cream of rice (cooked in water)
    • 1 tbsp coconut oil
  • Meal 2: 
    • 2% flavored Chobani Greek Yogurt
  • Meal 3: 
    • 3 oz chicken
    • Green beans
    • 1/2c cooked rice
  • Meal 4: 
    • 3 oz chicken
    • Green beans
    • 1/2c cooked rice
    • 1 tbsp coconut oil
  • Meal 5: 
    • 0% flavored Chobani Greek Yogurt
    • 1 tbsp coconut oil
